Beans are dried or shelled, cooked and peeled and have a buttery texture. The 3 to 4 foot plants are upright and non-branching. The 1 to 3 foot long tap root opens up heavy, compacted soils. Good nitrogen fixing cover crop produces large quantities of dry matter.
